For the Coffee Ice Cream Sundae:

  • Coffee ice cream – 4 scoops
  • Whipped cream – ½ cup
  • Chocolate syrup – 2 tbsp
  • Chopped nuts optional – ¼ cup

Instructions
 

For the Grilled Veggies:

  • Preheat the grill to medium-high heat.
  • Toss the zucchini, bell peppers, and onion in olive oil, salt, pepper, and garlic powder.
  • Place the veggies on the grill and cook for 5-7 minutes on each side until charred.
  • Squeeze lemon juice over the grilled veggies for a finishing touch.

For the Coffee Ice Cream Sundae:

  • Scoop coffee ice cream into 4 bowls.
  • Top each scoop with a dollop of whipped cream.
  • Drizzle with chocolate syrup and sprinkle chopped nuts if desired.
