Coffee Dough

  • 1 1/2 cups rolled oats, lightly crushed
  • 1 cup whole wheat flour
  • 2 tsp instant coffee granules
  • 1/2 cup chopped almonds
  • 1/3 cup maple syrup
  • 1/2 cup Greek yogurt
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet. Combine oats, flour, coffee, and almonds in a large bowl.
  • Whisk maple syrup, yogurt, and egg until smooth. Stir into dry ingredients until a soft, slightly sticky dough forms.
  • Use a scoop to portion dough onto the tray. Shape gently for even cookies with rounded edges.
  • Bake until the tops look set and edges turn lightly golden. Cool on a rack before serving.

Notes

For softer cookies, bake one minute less. For crispier texture, add two extra minutes. Freeze baked cookies in airtight layers for up to two months. Chill sticky dough before assembly for easier handling. Add cinnamon, cocoa, or nuts for flavor changes. Store sealed at room temperature for four days.
