  • 1/2 cup protein powder chocolate or vanilla
  • 1/4 cup brewed coffee cooled
  • 1/4 cup shredded coconut unsweetened
  • 1/4 cup cocoa powder
  • 1/4 cup almond butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • Combine oats, protein powder, cocoa, and shredded coconut in a mixing bowl, stirring until blended.
  • Add wet ingredients: Mix in the coffee, almond butter, honey, and vanilla extract until a sticky dough forms.
  • Press dough into the baking pan evenly using a spatula or spoon.
  • Bake for 15 minutes or until edges are set. Let cool before cutting into bars.
