  • Strong brewed espresso – ½ cup cooled
  • Coconut milk – ½ cup full-fat
  • Vegan coconut ice cream – 2 scoops
  • Ice cubes – 6–8 cubes
  • Maple syrup – 1–2 tsp optional
  • Vanilla extract – ¼ tsp optional
  • Vegan chocolate shavings – 1 tbsp optional garnish

Instructions
 

  • Brew espresso and let it cool.
  • Add coconut milk, coconut ice cream, maple syrup, vanilla, and ice cubes into blender.
  • Pour cooled espresso into blender.
  • Blend until frothy, creamy, and smooth.
  • Taste and adjust sweetness if desired.
  • Pour into glasses and garnish with chocolate shavings.
  • Serve immediately for a chilled, indulgent treat.
