Ingredients
  

For Iced Vanilla Latte:

  • 1 cup brewed espresso or strong coffee
  • 1/2 cup milk or non-dairy milk
  • 1 tbsp vanilla syrup
  • Ice cubes

For Almond Cookies:

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 1/3 cup granulated sugar
  • 1/3 cup almond meal
  • 1 large egg
  • 1 tsp almond extrac

Instructions
 

  • Brew espresso or strong coffee.
  • In a glass, combine ice cubes, coffee, milk, and vanilla syrup. Stir well.
  • Preheat oven to 350°F (175°C).
  • Mix flour, baking powder, and salt in a bowl.
  • Cream butter and sugar together, then beat in the egg and almond extract.
  • Gradually add dry ingredients to wet ingredients.
  • Drop spoonfuls of dough onto a baking sheet.
  • Bake for 10-12 minutes, until golden.
  • Cool cookies on a rack.
  • Serve iced vanilla latte with almond cookies and enjoy!
