Lemon Herb Chicken
- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon zested and juiced
- 2 garlic cloves minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Coffee Mousse
- 1 cup coconut cream
- 1 tbsp instant coffee or espresso powder
- 1/2 cup vegan chocolate chips
- 1 tbsp maple syrup
- 1 tsp vanilla extract
For the Lemon Herb Chicken
Preheat the oven to 375°F (190°C).
In a bowl, mix olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, and pepper.
Coat chicken breasts with the marinade and let them sit for 10 minutes.
