Lemon Herb Chicken

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 lemon zested and juiced

Coffee Mousse

  • 1 cup coconut cream
  • 1 tbsp instant coffee or espresso powder
  • 1/2 cup vegan chocolate chips
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions
 

For the Lemon Herb Chicken

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, and pepper.
  • Coat chicken breasts with the marinade and let them sit for 10 minutes.
  • Heat a skillet over medium-high heat. Sear the chicken for 3-4 minutes on each side.
  • Transfer the chicken to the oven and bake for 20-25 minutes or until fully cooked.

For the Coffee Mousse

  • In a mixing bowl, whisk together coconut cream, coffee powder, maple syrup, and vanilla.
  • Melt vegan chocolate chips and fold into the coconut cream mixture.
  • Chill the mousse for at least 30 minutes before serving.
  • Serve the mousse topped with chocolate shavings or a coffee bean for extra flair.
