For the Meatballs:

  • Butter – ½ cup
  • Sugar – 1 cup
  • Eggs – 2
  • Vanilla extract – 1 tsp
  • All-purpose flour – 1 cup
  • Cocoa powder – ½ cup
  • Baking powder – ½ tsp
  • Instant coffee granules – 2 tbsp
  • Salt – ¼ tsp

Instructions
 

For the Meatballs:

  • Preheat oven to 375°F.
  • In a bowl, combine ground beef, breadcrumbs, egg, garlic, onion, parsley, salt, and pepper.
  • Roll mixture into small meatballs and place them on a baking sheet.
  • Heat olive oil in a skillet over medium-high heat, and sear meatballs for 2 minutes per side.
  • Finish cooking meatballs in the oven for 10-12 minutes, or until cooked through.

For the Coffee-Infused Brownies:

  • Preheat oven to 350°F.
  • Melt butter in a saucepan over low heat. Add sugar, eggs, and vanilla and stir.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, coffee, and salt.
  • Add the dry ingredients to the wet ingredients and mix until smooth.
  • Pour the batter into a greased baking pan and bake for 20-25 minutes.
  • Let brownies cool, then cut into squares.
