Ingredients
  

Mini Vegan Quiches:

  • 1 block 14 oz firm tofu, drained
  • ¼ cup unsweetened almond milk
  • 2 tbsp nutritional yeast
  • ½ tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 1 cup spinach chopped
  • ½ cup red bell pepper diced
  • ½ cup onion finely chopped
  • Salt and pepper to taste

Vegan Coffee Cake:

  • cups all-purpose flour
  • ½ cup brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp baking powder
  • ¼ tsp salt
  • ¾ cup almond milk
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup for swirl

Instructions
 

Mini Quiches:

  • Preheat oven to 375°F (190°C).
  • Grease mini muffin tin lightly with olive oil.
  • In a blender, combine tofu, almond milk, nutritional yeast, turmeric, garlic, onion powder, salt, and pepper.
  • Blend until smooth and creamy.
  • In a pan, sauté onions, bell pepper, and spinach for 5 minutes.
  • Mix sautéed veggies into tofu mixture.
  • Spoon into muffin tin cups evenly.
  • Bake for 25 minutes, until firm and lightly golden.
  • Let cool slightly before serving.

Coffee Cake:

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix flour, sugar, cinnamon, baking powder, and salt.
  • In another bowl, whisk almond milk, coconut oil, and vanilla.
  • Combine wet and dry ingredients.
  • Pour into greased loaf pan.
  • Swirl in maple syrup like the drama queen you are.
  • Bake for 30 minutes or until toothpick comes out clean.
  • Cool before slicing.
