Mocha Cashew Energy Bars

These Mocha Cashew Energy Bars combine the energizing power of coffee with the rich, buttery taste of cashews.

- 1 cup cashews
- 1/2 cup dates pitted
- 2 tbsp ground coffee
- 1 tbsp cacao powder
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp coconut oil
- 1-2 tbsp water as needed
Process the cashews in a food processor until they’re finely chopped.
Add dates, coffee, cacao, maple syrup, vanilla, and salt. Blend until combined.
Slowly add coconut oil and blend until smooth.
If the mixture is too dry, add water, one tablespoon at a time.
Press the mixture into a parchment-lined 8x8 pan.
Refrigerate for 20-30 minutes, then cut into bars.
