Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Dissolve espresso powder in hot water and set aside.
In a bowl, combine flour, baking soda, and salt.
In another bowl, whisk together coconut sugar, coconut oil, almond milk, vanilla, and espresso mixture.
Add wet ingredients to dry ingredients, stirring until fully combined.
Stir in chocolate chips.
Scoop dough onto the baking sheet, spacing cookies apart.
Bake for 12–15 minutes or until edges turn golden.
Let cool on a wire rack.
