Ingredients
  

For the Mocha Pudding

  • 1 cup whole milk
  • ½ cup heavy cream
  • ¼ cup sugar
  • 1 tbsp instant coffee dissolved in 1 tbsp hot water
  • 2 tbsp cocoa powder
  • ½ tsp vanilla extract
  • 1 tbsp cornstarch
  • ½ tsp gelatin bloomed in 1 tbsp cold water

For the Mousse Layer

  • ½ cup heavy cream whipped to stiff peaks
  • 1 tbsp powdered sugar

Instructions
 

Make the Pudding

  • Heat milk, heavy cream, and sugar in a saucepan over medium heat.
  • Add cocoa powder and dissolved coffee, whisking until smooth.
  • Stir in vanilla extract and cornstarch, cooking until slightly thickened.
  • Remove from heat and mix in melted gelatin.
  • Pour into serving cups and let cool.

Prepare the Mousse Layer

  • Whip heavy cream with powdered sugar until stiff peaks form.
  • Gently spread over the chilled pudding layer.
  • Refrigerate for at least 2 hours before serving.
