For the Mocha Pudding
- 1 cup whole milk
- ½ cup heavy cream
- ¼ cup sugar
- 1 tbsp instant coffee dissolved in 1 tbsp hot water
- 2 tbsp cocoa powder
- ½ tsp vanilla extract
- 1 tbsp cornstarch
- ½ tsp gelatin bloomed in 1 tbsp cold water
For the Mousse Layer
- ½ cup heavy cream whipped to stiff peaks
- 1 tbsp powdered sugar
Make the Pudding
Heat milk, heavy cream, and sugar in a saucepan over medium heat.
Add cocoa powder and dissolved coffee, whisking until smooth.
Stir in vanilla extract and cornstarch, cooking until slightly thickened.
Remove from heat and mix in melted gelatin.
Pour into serving cups and let cool.
Prepare the Mousse Layer
Whip heavy cream with powdered sugar until stiff peaks form.
Gently spread over the chilled pudding layer.
