Ingredients
  

  • 1 ¼ cups all-purpose flour

  • ½ cup almond milk unsweetened
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee powder
  • 1 cup fresh strawberries diced
  • 1 cup coconut cream chilled
  • 2 tbsp powdered sugar

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Mix flour, sugar, baking powder, and salt in a bowl.
  • Cut in solid coconut oil until mixture is crumbly.
  • Stir almond milk, vanilla, and coffee powder into the dry ingredients.
  • Drop small spoonfuls of dough onto a baking tray to form 12 mini shortcakes.
  • Bake for 12 minutes or until golden; cool completely.
  • Whip chilled coconut cream with powdered sugar until fluffy.
  • Slice shortcakes halfway, layer with strawberries and whipped cream, then close bites.
  • Chill for 15 minutes before serving for best flavor.
