Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup mixed nuts chopped
  • 1/4 cup brewed coffee cooled
  • 1/4 cup protein powder vanilla or chocolate
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: chocolate chips for topping

Instructions
 

  • Preheat Oven
  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • Mix Wet Ingredients
  • In a mixing bowl, combine almond butter, honey (or maple syrup), brewed coffee, and vanilla extract. Stir until smooth.
  • Combine Dry Ingredients
  • In another bowl, mix rolled oats, chopped nuts, protein powder, and salt until evenly distributed.
  • Combine Mixtures
  • Pour the wet mixture into the dry ingredients. Stir until everything is well combined and sticky.
  • Transfer to Pan
  • Spread the mixture evenly in the prepared baking pan, pressing it down firmly. If desired, sprinkle chocolate chips on top.
  • Bake
  • Bake for 20 minutes until golden brown. Allow to cool completely in the pan before slicing into bars.
  • Store and Enjoy
  • Once cooled, cut into bars. Store in an airtight container for up to a week. Enjoy your nutty delights!
