  • For the Cake:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk any kind
  • For the Streusel Topping:
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter melted

  • Preheat the oven to 350°F 175°C and grease a 9-inch round cake pan.
  • In a bowl whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt.
  • In another bowl mix pumpkin, sugars, oil, eggs, vanilla, and milk.
  • Add dry ingredients to wet ingredients and stir until combined.
  • Pour the batter into the prepared pan.
  • In a small bowl combine oats, brown sugar, cinnamon, and melted butter for the streusel.
  • Sprinkle the streusel over the cake batter.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Let the cake cool on a rack before slicing.
