Ingredients
  

  • 1 cup unsweetened almond milk
  • ½ cup strong brewed coffee or 1 espresso shot
  • ½ cup pumpkin purée
  • 1 frozen banana
  • cup rolled oats
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • ½ cup ice cubes

Instructions
 

  • Pour 1 cup almond milk into blender.
  • Add ½ cup strong coffee or 1 espresso shot.
  • Spoon in ½ cup pumpkin purée.
  • Drop in 1 frozen banana.
  • Add ⅓ cup rolled oats.
  • Sweeten with 2 tablespoons maple syrup.
  • Sprinkle in 1 teaspoon pumpkin pie spice.
  • Add ½ teaspoon vanilla extract.
  • Toss in ½ cup ice cubes.
  • Blend until creamy and smooth. Serve chilled.
