I make this pumpkin-spiced delight when I'm feeling extra cozy but still need that caffeinated kick. It's my little secret for pretending I have my life together during the chaotic fall season. Plus, it’s the perfect pick-me-up during those pumpkin patch excursions—because let’s be honest, no one needs to see me without my coffee!

Ingredients
  

Cold Brew:

  • 1 cup coarsely ground coffee beans
  • 4 cups cold filtered water

Pumpkin Spice Syrup:

  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup pumpkin puree canned or homemade
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract

To Finish:

  • Ice cubes seriously, load them up
  • Whipped cream optional, but highly encouraged
  • Extra pumpkin spice for sprinkling because you’re fancy

Instructions
 

  • Brew the Cold Brew: Combine coarsely ground coffee beans and cold, filtered water in a large jar. Stir, cover, and let it steep in the fridge for 12 hours. Pretend you're a coffee alchemist while you wait.
  • Strain the Cold Brew: After the steeping magic is done, strain the coffee through a fine mesh strainer or coffee filter into a clean container. Your cold brew is ready to be transformed into a pumpkin spice wonder.
  • Make the Pumpkin Spice Syrup: In a small saucepan, mix granulated sugar and water. Cook over medium heat until the sugar dissolves. Add pumpkin puree, cinnamon, nutmeg, ginger, and cloves. Simmer for a few minutes until everything’s well combined. Remove from heat and stir in vanilla extract. Let it cool.
  • Assemble the Drink: Fill a glass with ice cubes, pour in your cold brew until it's about two-thirds full, and stir in a generous amount of pumpkin spice syrup. Taste and add more syrup if you're feeling extra indulgent.
