Ah, the Pumpkin Spice Latte, the drink that turns every basic fall morning into an Instagram-worthy event. It’s the official beverage of sweater weather and the reason pumpkins have been co-opted by coffee shops everywhere. Starbucks turned this into a seasonal addiction, convincing us that autumn tastes like a spiced dessert in a cup. We know it’s just sugar and nostalgia, but who cares? When that chill hits the air, we all line up to sip the pumpkin-flavored hype. Because nothing says "fall" like drinking your pie while pretending it’s still healthy.

Ingredients
  

  • 1 cup of milk any type
  • 2 tablespoons of pumpkin puree
  • 1 tablespoon of sugar or sweetener
  • 1/2 teaspoon of pumpkin pie spice
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of brewed coffee or espresso
  • Whipped cream optional, for topping
  • Pinch of cinnamon optional, for garnish

Instructions
 

  • Heat the Milk: In a saucepan, combine 1 cup of milk, 2 tablespoons of pumpkin puree, 1 tablespoon of sugar, and 1/2 teaspoon of pumpkin pie spice. Heat over medium heat, whisking constantly until hot and well-mixed.
  • Add Vanilla: Remove the saucepan from heat and stir in 1/2 teaspoon of vanilla extract.
  • Blend: For a frothy latte, blend the mixture in a blender for 20-30 seconds, or use a milk frother.
  • Combine with Coffee: Pour 1/4 cup of brewed coffee or espresso into your mug, then add the pumpkin spice milk mixture. Stir well to combine.
  • Top and Serve: Top with whipped cream and a pinch of cinnamon if desired. Serve immediately.
