  • ¼ cup heavy cream
  • 1 tbsp finely ground coffee
  • 4 oz dark chocolate
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the Oven: Set your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • Mix the Shortbread Dough: Beat softened butter, powdered sugar, and vanilla until creamy. Gradually add flour and salt until a dough forms.
  • Shape the Dough: Roll dough into 1-inch balls, then flatten them slightly on the prepared baking sheet.
  • Bake the Cookies: Bake for 12-15 minutes or until golden around the edges.
  • Prepare Mocha Ganache: Heat heavy cream and ground coffee in a saucepan over medium heat until it simmers.
  • Make the Ganache: Pour the hot cream over the chopped dark chocolate. Stir until smooth, then add vanilla.
  • Top the Cookies: Spoon a small dollop of mocha ganache onto each cooled cookie and let it set.
  • Cool and Serve: Allow cookies to cool completely before serving.
