Ingredients
  

Brown Sugar Syrup

  • Light brown sugar — 1/4 cup (50 g)
  • Water — 1/4 cup (60 ml)
  • Ground cinnamon — 1/2 teaspoon (1.5 g)

Espresso Base

  • Espresso — 4 shots (120 ml), freshly brewed
  • Ice cubes — 2 cups (280 g)
  • Oat milk — 1 1/2 cups (360 ml), chilled
  • Vanilla extract — 1/2 teaspoon (2.5 ml), optional

Finishing

  • Ground cinnamon — 1 pinch (0.1 g), for garnish

Instructions
 

  • Combine brown sugar, water, and cinnamon in a small saucepan. Heat over medium-low heat until the sugar dissolves and the syrup looks smooth.
  • Remove the syrup from the heat and stir in vanilla if using. Let the mixture cool completely before preparing the espresso.
  • Brew four espresso shots. Let them cool for 2 to 3 minutes so the ice does not melt too quickly during shaking.
  • Add cooled espresso, 2 tablespoons brown sugar syrup, and a pinch of cinnamon to a cocktail shaker filled with 1 cup ice.
  • Shake vigorously for 10 to 15 seconds until the espresso becomes cold and lightly frothy. This creates the signature shaken texture.
  • Fill two serving glasses with fresh ice. Pour the shaken espresso evenly over the ice, leaving room for oat milk.
  • Slowly pour chilled oat milk into each glass. Stir gently for an even drink or leave the layers visible for a café-style presentation.
  • Finish with a light sprinkle of cinnamon. Taste before adding extra syrup because the brown sugar already provides noticeable sweetness.
  • Serve immediately while the drink remains cold and frothy. Add fresh ice if the coffee becomes too warm or concentrated.
  • Store unused brown sugar syrup separately in the refrigerator. Shake fresh espresso with ice immediately before assembling each drink.

Notes

For the smoothest texture, use chilled oat milk and slightly cooled espresso. Shake vigorously to create a light foam, but avoid overfilling the shaker. Use more syrup for a sweeter drink or reduce it for a stronger coffee profile. Add vanilla, pumpkin spice, cardamom, nutmeg, or a tiny pinch of sea salt for customization. Store brown sugar syrup in an airtight container in the refrigerator for up to 1 week. Do not freeze the assembled drink because oat milk can separate after thawing. Assemble immediately before serving for the freshest flavor and best texture.
