Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • cup melted butter
  • 2 cups strawberry ice cream softened
  • 2 cups mint ice cream softened
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup whipped cream
  • ½ cup fresh mint leaves finely chopped

Instructions
 

  • Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan and chill.
  • Soften both strawberry and mint ice cream. Spread strawberry ice cream evenly over the crust.
  • Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream and chopped mint.
  • Spread the cream cheese mixture over the ice cream.
  • Top with softened mint ice cream and freeze for 4 hours.
  • Serve chilled and enjoy!
