- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- 2 cups strawberry ice cream softened
- 2 cups mint ice cream softened
- 8 oz cream cheese softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- ½ cup whipped cream
- ½ cup fresh mint leaves finely chopped
Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan and chill.
Soften both strawberry and mint ice cream. Spread strawberry ice cream evenly over the crust.
Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream and chopped mint.
Spread the cream cheese mixture over the ice cream.
Top with softened mint ice cream and freeze for 4 hours.
