Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss sweet potato fries with olive oil, salt, pepper, paprika, and cornstarch in a bowl.
  • Spread fries on the baking sheet in a single layer (crowding equals soggy fries).
  • Bake for 20-25 minutes, flipping halfway through for even crispiness.
  • While fries bake, whisk coffee, maple syrup, balsamic vinegar, cinnamon, and cayenne in a small bowl.
  • Simmer the mixture over low heat for 5 minutes until slightly thickened.
  • Remove fries from the oven, let them sit for 2 minutes, then drizzle with the glaze.
