Ingredients
  

For the Sweet Potato Fritters:

  • 2 cups grated sweet potatoes
  • ½ cup all-purpose flour
  • 1 egg
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ tsp black pepper
  • ¼ cup chopped green onions
  • ½ tsp garlic powder
  • ¼ cup vegetable oil for frying

For the Coffee Dip:

  • ½ cup Greek yogurt
  • 1 tbsp brewed strong coffee cooled
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • Pinch of cinnamon

Instructions
 

  • In a bowl, mix grated sweet potatoes, flour, egg, cinnamon, salt, pepper, green onions, and garlic powder until combined.
  • Heat vegetable oil in a pan over medium heat.
  • Scoop tablespoon-sized portions of the mixture into the hot oil and flatten slightly.
  • Fry each fritter for 3–4 minutes per side until crispy and golden.
  • Remove and drain on paper towels.
  • For the dip, whisk together Greek yogurt, coffee, honey, vanilla, and cinnamon until smooth.
  • Serve warm fritters with the coffee dip on the side.
  • Dunk, devour, and repeat.
