Ingredients
  

For the Pancakes:

  • 1 cup mashed sweet potato
  • 1 ¼ cups all-purpose flour
  • 1 tbsp brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 cup milk or non-dairy alternative
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or oil

For the Coffee Drizzle:

  • ½ cup brewed coffee strong
  • 2 tbsp maple syrup
  • 1 tbsp unsalted butter
  • ½ tsp cocoa powder
  • ¼ tsp sea salt

Instructions
 

  • In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk mashed sweet potato, milk, egg, vanilla, and melted butter.
  • Gradually mix dry ingredients into wet ingredients until smooth.
  • Heat a skillet over medium heat and grease lightly.
  • Pour batter onto the skillet, cooking for 2–3 minutes per side.
  • In a saucepan, whisk coffee, maple syrup, butter, cocoa, and salt.
  • Simmer for 3–5 minutes until slightly thickened.
  • Drizzle over pancakes and serve immediately.
