Ingredients
  

  • Rolled oats: 1 cup
  • Vanilla protein powder: 1/3 cup
  • Ground coffee or espresso powder: 1 tbsp
  • Honey or maple syrup: 3 tbsp
  • Almond butter: 1/4 cup
  • Vanilla extract: 1 tsp
  • Chia seeds: 2 tbsp
  • Mini chocolate chips: 2 tbsp
  • Pinch of sea salt

Instructions
 

  • Mix dry ingredients: In a food processor, pulse oats, protein powder, coffee, and chia seeds until combined.
  • Blend wet ingredients: Add almond butter, honey, and vanilla extract to the mix. Process until a dough-like texture forms.
  • Add chocolate chips: Fold in mini chocolate chips with a spatula.
  • Shape the bites: Roll the mixture into 1-inch balls.
  • Chill: Place bites on a tray and refrigerate for 10 minutes to firm up.
  • Serve or store: Enjoy immediately or keep in an airtight container for up to a week.
