Ingredients
For the Cucumber and Carrot Salad:
- 2 cucumbers sliced
- 2 carrots peeled and julienned
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
For the Mocha Mousse:
- 1 cup heavy cream
- 2 tbsp instant coffee granules
- 1 cup dark chocolate chips
- 1/4 cup sugar
- 1/2 tsp vanilla extract
Instructions
- Slice the cucumbers and julienne the carrots.
- Toss them together in a bowl with olive oil, lemon juice, salt, and pepper.
- For the mousse, melt the chocolate and dissolve the coffee granules in hot water.
- Whisk heavy cream until soft peaks form.
