Ingredients
  

For the Cucumber and Carrot Salad:

  • 2 cucumbers sliced
  • 2 carrots peeled and julienned
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

For the Mocha Mousse:

  • 1 cup heavy cream
  • 2 tbsp instant coffee granules
  • 1 cup dark chocolate chips
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract

Instructions
 

  • Slice the cucumbers and julienne the carrots.
  • Toss them together in a bowl with olive oil, lemon juice, salt, and pepper.
  • For the mousse, melt the chocolate and dissolve the coffee granules in hot water.
  • Whisk heavy cream until soft peaks form.
  • Fold in the melted chocolate and coffee mixture.
  • Spoon the mousse over the salad or serve separately.
  • Chill the mousse for 2 hours until set.
