For the Cucumber and Carrot Salad:
- 2 cucumbers sliced
- 2 carrots peeled and julienned
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
For the Mocha Mousse:
- 1 cup heavy cream
- 2 tbsp instant coffee granules
- 1 cup dark chocolate chips
- 1/4 cup sugar
- 1/2 tsp vanilla extract
Slice the cucumbers and julienne the carrots.
Toss them together in a bowl with olive oil, lemon juice, salt, and pepper.
For the mousse, melt the chocolate and dissolve the coffee granules in hot water.
Whisk heavy cream until soft peaks form.
Fold in the melted chocolate and coffee mixture.
Spoon the mousse over the salad or serve separately.
Chill the mousse for 2 hours until set.
