Ingredients
  

For the Cucumber and Corn Salad:

  • 2 cucumbers diced
  • 1 cup sweet corn kernels fresh or frozen
  • 1/4 cup red onion finely chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste

For the Mocha Tiramisu:

  • 1 cup strong brewed coffee cooled
  • 2 tbsp cocoa powder
  • 1 tbsp sugar
  • 1 package ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2 tbsp dark chocolate shaved

Instructions
 

Cucumber and Corn Salad:

  • Dice the cucumbers and chop the red onion.
  • In a bowl, combine cucumbers, corn, and red onion.
  • Drizzle with olive oil and lime juice, and season with salt and pepper. Toss well and serve chilled.

Mocha Tiramisu:

  • Brew coffee and stir in cocoa powder and sugar until dissolved. Set aside to cool.
  • In a mixing bowl, whip mascarpone cheese, heavy cream, and powdered sugar until smooth and thick.
  • Lightly dip ladyfingers into the cooled coffee mixture and layer them in a dish.
  • Spread a layer of the mascarpone mixture on top of the ladyfingers. Repeat layers.
  • Chill in the fridge for at least 2 hours.
  • Before serving, shave dark chocolate on top for a finishing touch.
