Ingredients
For the Cucumber and Corn Salad:

cucumbers
diced

sweet corn kernels
fresh or frozen

red onion
finely chopped

Salt and pepper to taste
For the Mocha Tiramisu:

strong brewed coffee
cooled

cocoa powder

tbsp
sugar

package ladyfingers

mascarpone cheese

cup
heavy cream

powdered sugar

vanilla extract

dark chocolate
shaved
Instructions
Cucumber and Corn Salad:
Dice the cucumbers and chop the red onion.
In a bowl, combine cucumbers, corn, and red onion.
Drizzle with olive oil and lime juice, and season with salt and pepper. Toss well and serve chilled.
Mocha Tiramisu:
Brew coffee and stir in cocoa powder and sugar until dissolved. Set aside to cool.
In a mixing bowl, whip mascarpone cheese, heavy cream, and powdered sugar until smooth and thick.
Lightly dip ladyfingers into the cooled coffee mixture and layer them in a dish.
Spread a layer of the mascarpone mixture on top of the ladyfingers. Repeat layers.
Chill in the fridge for at least 2 hours.
Before serving, shave dark chocolate on top for a finishing touch.
