Equipment
- espresso machine
- Measuring cups
- Measuring Spoons
- cocktail shaker
- mixing glass
- Long Spoon
- serving glasses
- Ice Tray
- Freezer
Ingredients
Brown Sugar Syrup
- Light brown sugar — 1/4 cup (50 g)
- Water — 1/4 cup (60 ml)
- Ground cinnamon — 1/2 teaspoon (1.5 g)
Espresso Base
- Espresso — 4 shots (120 ml), freshly brewed
- Ice cubes — 2 cups (280 g)
- Oat milk — 1 1/2 cups (360 ml), chilled
- Vanilla extract — 1/2 teaspoon (2.5 ml), optional
Finishing
- Ground cinnamon — 1 pinch (0.1 g), for garnish
Instructions
- Combine brown sugar, water, and cinnamon in a small saucepan. Warm over medium-low heat until the sugar dissolves and the syrup becomes smooth.
- Remove the syrup from the heat and stir in vanilla if using. Let it cool completely before mixing with the espresso.
- Brew four espresso shots and let them cool for 2 to 3 minutes. Do not pour steaming coffee directly over ice because it melts quickly.
- Add cooled espresso, 2 tablespoons brown sugar syrup, cinnamon, and 1 cup ice to a cocktail shaker or tightly sealed mixing container.
- Shake vigorously for 10 to 15 seconds until the coffee becomes chilled and lightly frothy. The shaking creates the signature airy texture.
- Fill two serving glasses with fresh ice. Pour the shaken espresso evenly over the ice, leaving enough room for the oat milk.
- Slowly pour chilled oat milk into each glass. Let it naturally blend with the espresso, or stir gently for a more uniform drink.
- Finish each drink with a tiny sprinkle of cinnamon. Taste before adding more syrup because the brown sugar already provides plenty of sweetness.
- Serve immediately while the drink remains cold and frothy. Add extra ice if the coffee becomes too concentrated or warm.
- For make-ahead preparation, refrigerate the brown sugar syrup separately and shake fresh espresso with ice just before assembly.
Notes
Use chilled oat milk and cooled espresso to maintain a cold, frothy drink without excessive dilution. For stronger coffee flavor, use an additional espresso shot. For a sweeter drink, add brown sugar syrup gradually. Shake vigorously for a lighter foam, but avoid overfilling the shaker. Customize the flavor with vanilla, nutmeg, cardamom, pumpkin spice, maple syrup, or a small pinch of sea salt. Store homemade brown sugar syrup in an airtight container in the refrigerator for up to 1 week. Do not freeze the assembled drink because the oat milk can separate and the texture becomes watery after thawing. For the best texture, assemble and serve immediately.
