Ingredients
  

  • 1 cup dried figs
  • ½ cup rolled oats
  • ¼ cup coffee grounds
  • ¼ cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp chia seeds
  • 2 tbsp water if needed

Instructions
 

  • In a food processor, pulse the dried figs until finely chopped.
  • Add oats, coffee grounds, almond butter, maple syrup, vanilla, chia seeds, and salt. Blend until mixed.
  • If the mixture is too dry, add water one tablespoon at a time.
  • Press the mixture into an 8×8 pan lined with parchment paper.
  • Chill in the fridge for 20-30 minutes until set.
