Mocha Fig Energy Bars mix the bold taste of coffee with the natural sweetness of figs in an energizing, vegan-friendly snack.

- 1 cup dried figs
- ½ cup rolled oats
- ¼ cup coffee grounds
- ¼ cup almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp chia seeds
- 2 tbsp water if needed
In a food processor, pulse the dried figs until finely chopped.
Add oats, coffee grounds, almond butter, maple syrup, vanilla, chia seeds, and salt. Blend until mixed.
If the mixture is too dry, add water one tablespoon at a time.
Press the mixture into an 8x8 pan lined with parchment paper.
Chill in the fridge for 20-30 minutes until set.
