- Heat the oven to 175°C. Line a 20-centimeter square baking pan with parchment paper, leaving enough paper over the edges for lifting.
- Whisk flour, baking powder, baking soda, and salt in a medium bowl until evenly combined.
- Beat softened butter and sugar until creamy. Add eggs one at a time, then mix in vanilla and sour cream until smooth.
- Fold the dry mixture into the wet mixture just until no dry streaks remain. Avoid overmixing so the cake stays tender.
- Fold in diced peaches gently. Spread the thick batter evenly across the prepared pan.
- Mix flour, brown sugar, cinnamon, and melted butter in a bowl until coarse, crumbly pieces form. Scatter the topping evenly over the batter.
