Ingredients
  

For the BBQ Ribs:

  • 2 racks of vegan ribs or jackfruit as a substitute
  • 1 cup BBQ sauce store-bought or homemade
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt to taste

For the Coffee Truffles:

  • 1/2 cup dark chocolate chips
  • 1/4 cup coconut milk
  • 1 tbsp instant coffee powder
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut oil
  • 1/4 cup cocoa powder for dusting

Instructions
 

For the BBQ Ribs:

  • Preheat oven to 375°F (190°C).
  • Rub the ribs with olive oil, paprika, black pepper, garlic powder, and onion powder.
  • Bake the ribs for 45 minutes, then brush with BBQ sauce.
  • Continue baking for another 45 minutes, occasionally basting with BBQ sauce.
  • Once cooked, remove from the oven and rest for 10 minutes.

For the Coffee Truffles:

  • Melt the chocolate chips and coconut oil together in a saucepan over low heat.
  • Stir in coffee powder and vanilla extract.
  • Allow the mixture to cool, then form into small balls.
  • Roll truffles in cocoa powder.
  • Refrigerate for 1 hour before serving.
