Ingredients
  

Vegan BBQ Ribs:

  • cups vital wheat gluten
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 1 tsp onion powder
  • ¾ cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • ½ cup vegan BBQ sauce plus extra for glazing

Coffee Truffles:

  • 1 cup dark vegan chocolate chips
  • ¼ cup full-fat coconut milk
  • 2 tbsp brewed espresso
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Unsweetened cocoa powder for rolling

Instructions
 

For BBQ Ribs:

  • In a bowl, mix wheat gluten, nutritional yeast, and spices.
  • In another bowl, combine broth, soy sauce, tomato paste, and olive oil.
  • Pour wet mix into dry, stir until dough forms.
  • Knead for 2 minutes until firm but stretchy.
  • Shape into a rectangle and place on parchment-lined baking tray.
  • Bake at 350°F for 25 minutes.
  • Brush with BBQ sauce and grill or pan-sear for charred edges.
  • For Coffee Truffles:
  • In a saucepan, heat coconut milk until just simmering.
  • Pour over chocolate chips in a bowl and let sit 2 minutes.
  • Stir until smooth, then add espresso, vanilla, and salt.
  • Chill the mixture for 1 hour until firm.
  • Scoop and roll into balls.
  • Dust with cocoa powder before serving like the dessert queen you are.
