Ingredients
  

For the Butterscotch Banana Bread:

  • Ripe bananas mashed: 3 medium
  • All-purpose flour: 2 cups
  • Granulated sugar: ¾ cup
  • Butterscotch chips: 1 cup
  • Baking soda: 1 teaspoon
  • Salt: ½ teaspoon
  • Eggs: 2 large
  • Butter melted: ½ cup
  • Vanilla extract: 1 teaspoon
  • Greek yogurt: ½ cup

For the Coffee Icing:

  • Brewed coffee cooled: 2 tablespoons
  • Powdered sugar: 1 cup
  • Butter softened: 1 tablespoon
  • Vanilla extract: ½ teaspoon

Instructions
 

  • Step 1: Preheat and Prepare
  • Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  • Step 2: Mix Dry Ingredients
  • In a bowl, combine flour, baking soda, and salt. Set aside.
  • Step 3: Prepare Wet Ingredients
  • In another bowl, beat eggs, sugar, melted butter, vanilla, and Greek yogurt until smooth. Stir in mashed bananas.
  • Step 4: Combine Wet and Dry
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Step 5: Add Butterscotch
  • Fold in the butterscotch chips.
  • Step 6: Bake
  • Pour the batter into the prepared loaf pan. Bake for 50 minutes or until a toothpick comes out clean. Let cool.
  • Step 7: Make Coffee Icing
  • In a small saucepan, combine brewed coffee and butter. Stir until smooth, then add powdered sugar and vanilla extract.
  • Step 8: Drizzle and Serve
  • Drizzle the coffee icing over the cooled banana bread. Slice and serve.
