These vegan coffee and cranberry energy bars offer a perfect balance of caffeine, antioxidants, and sweetness, making them the ultimate snack.

- 1 cup rolled oats
- ½ cup coffee grounds
- ¼ cup dried cranberries
- ¼ cup almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- 1 tbsp cocoa powder
- Pinch of salt
- ¼ cup water if needed
In a food processor, pulse oats and coffee grounds until coarse.
Add almond butter, maple syrup, vanilla, chia seeds, cocoa powder, and salt.
Blend until a dough forms.
Stir in cranberries.
Press mixture into an 8x8 pan lined with parchment paper.
Chill in the fridge for 30 minutes.
Slice into 12 bars and enjoy!
