These Coffee and Macadamia Nut Energy Bars offer the perfect combination of caffeine, healthy fats, and plant-based protein for an energy-packed snack.

- 1 cup dates pitted
- 1 cup macadamia nuts
- 2 tbsp ground coffee
- 2 tbsp plant-based protein powder
- 1 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 1 tbsp water if needed
In a food processor, blend the dates until finely chopped.
Add macadamia nuts, coffee, protein powder, coconut oil, maple syrup, vanilla, and salt.
Process until smooth.
Add water slowly if the mixture is too dry.
Press the mixture into a parchment-lined 8x8 pan.
Refrigerate for 20-30 minutes until firm.
Cut into bars and snack away!
