  • 2 ripe bananas
  • cups rolled oats
  • 2 tbsp ground espresso or instant coffee
  • ½ cup almond or peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: ¼ cup vegan chocolate chips or chopped walnuts

Instructions
 

  • Mash bananas like you’re crushing your enemies—smooth but satisfying.
  • Add nut butter, espresso, syrup, vanilla, cinnamon, and salt. Stir until it’s a happy brown mess.
  • Fold in oats and chia seeds until combined. Don’t overthink it.
  • If you're feeling extra, toss in chocolate chips or nuts like the decadent rebel you are.
  • Press the mixture into a lined pan and flatten evenly using a spatula or your emotional baggage.
  • Chill in the fridge for 1 hour or the freezer for 30 minutes.
  • Slice into 10 bars and store in an airtight container. Hide them from freeloaders.
