These Coffee Chia Seed Energy Bars combine the energizing magic of coffee with the crunch and health benefits of chia seeds.

- 1 cup oats
- 1/2 cup dates pitted
- 2 tbsp ground coffee
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp coconut oil
- 1-2 tbsp water as needed
Blend oats, dates, coffee, chia seeds, maple syrup, vanilla, and salt in a food processor.
Add coconut oil and blend until smooth.
Add water one tablespoon at a time if the mixture is too dry.
Press the mixture into a parchment-lined 8x8 pan.
Refrigerate for 20-30 minutes to firm up.
Slice into bars and enjoy!
