- 1 cup dates pitted
- ½ cup rolled oats
- ¼ cup coffee grounds
- ¼ cup hemp seeds
- 2 tbsp almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp water if needed
In a food processor, blend the dates until finely chopped.
Add oats, coffee grounds, hemp seeds, almond butter, maple syrup, vanilla, and salt. Blend until combined.
If the mixture is too dry, add water one tablespoon at a time.
Press the mixture into an 8x8 pan lined with parchment paper.
Refrigerate for 20-30 minutes until firm.
Cut into bars and enjoy!
