Ingredients
  

For the filling:

  • 2 cups mashed sweet potato roasted or boiled
  • ½ cup brewed strong coffee cooled
  • cup brown sugar
  • ¼ cup maple syrup
  • ¾ cup coconut milk full-fat, canned
  • tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • tsp ground cloves
  • ¼ tsp salt

For the crust (or use store-bought vegan crust):

  • cups all-purpose flour
  • ½ tsp salt
  • ½ cup vegan butter cold, cubed
  • 3 –5 tbsp ice water

Instructions
 

  • If making the crust, mix flour and salt, cut in vegan butter, and add water one tablespoon at a time until dough forms.
  • Roll the dough into a disk, chill for 15 minutes, then roll it out and press it into a 9-inch pie pan.
  • Preheat oven to 350°F (175°C). Par-bake the crust for 10 minutes if you want extra crispiness. Optional, not mandatory.
  • For the filling, blend mashed sweet potatoes, brewed coffee, brown sugar, syrup, coconut milk, spices, salt, and cornstarch until velvety.
  • Pour the mixture into the crust and smooth out the top like you smooth out your dating profile lies.
  • Bake for 50 minutes until slightly firm but still jiggly in the center—just like your motivation.
  • Let cool completely, then chill for at least 2 hours to set. Overnight makes it slice like a dream.
