Ingredients
For the filling:
- 2 cups mashed sweet potato roasted or boiled
- ½ cup brewed strong coffee cooled
- ⅓ cup brown sugar
- ¼ cup maple syrup
- ¾ cup coconut milk full-fat, canned
- 1½ tbsp cornstarch
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- ¼ tsp salt
For the crust (or use store-bought vegan crust):
- 1¼ cups all-purpose flour
- ½ tsp salt
- ½ cup vegan butter cold, cubed
- 3 –5 tbsp ice water
Instructions
- If making the crust, mix flour and salt, cut in vegan butter, and add water one tablespoon at a time until dough forms.
- Roll the dough into a disk, chill for 15 minutes, then roll it out and press it into a 9-inch pie pan.
- Preheat oven to 350°F (175°C). Par-bake the crust for 10 minutes if you want extra crispiness. Optional, not mandatory.
- For the filling, blend mashed sweet potatoes, brewed coffee, brown sugar, syrup, coconut milk, spices, salt, and cornstarch until velvety.
