- 1 cup oats
- 1/2 cup pecans chopped
- 1/4 cup maple syrup
- 2 tbsp ground coffee
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp coconut oil
- 1-2 tbsp water as needed
In a food processor, blend oats, pecans, coffee, and salt until finely chopped.
Add almond butter, maple syrup, and coconut oil. Blend until smooth.
Add water a tablespoon at a time until the mixture is moldable but not too sticky.
Press mixture into a parchment-lined 8x8 pan.
Chill in the fridge for 15-20 minutes.
Slice into bars, and get snacking!
