Mix gluten, chickpea flour, and spices in a large bowl.
Whisk coffee, soy sauce, oil, vinegar, and syrup in another bowl.
Combine wet and dry to form dough. Knead 3 minutes.
Shape into steaks and simmer in broth 30 minutes.

Preheat oven to 350°F (175°C). Line muffin tin.
Mix flour, cocoa, soda, and salt in a bowl.
In another bowl, whisk sugar, oil, milk, coffee, vanilla, and vinegar.
Combine wet and dry. Mix gently—don’t overbeat.
