  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar
  • cup neutral oil like canola
  • ¾ cup plant milk
  • 1 tbsp instant coffee
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

Instructions
 

  • Coffee-Marinated Vegan Steak:
  • Mix gluten, chickpea flour, and spices in a large bowl.
  • Whisk coffee, soy sauce, oil, vinegar, and syrup in another bowl.
  • Combine wet and dry to form dough. Knead 3 minutes.
  • Shape into steaks and simmer in broth 30 minutes.
  • Grill or pan-sear steaks until charred and dramatic.
  • Mocha Cupcakes:
  • Preheat oven to 350°F (175°C). Line muffin tin.
  • Mix flour, cocoa, soda, and salt in a bowl.
  • In another bowl, whisk sugar, oil, milk, coffee, vanilla, and vinegar.
