Ingredients
  

For the Brownie Cups

  • ½ cup unsalted butter melted
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ tsp salt
  • ½ tsp baking powder

For the Coffee Mousse

  • ¾ cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract

For the Topping

  • ½ cup dark chocolate melted

Instructions
 

Make the Brownie Cups

  • Preheat oven to 350°F (175°C).
  • Grease a muffin tin to prevent sticking.
  • Whisk melted butter, granulated sugar, and brown sugar until smooth.
  • Add eggs and vanilla, mixing until fully combined.
  • Sift in flour, cocoa powder, salt, and baking powder.
  • Fold the dry ingredients into the wet mixture.
  • Scoop batter into the muffin tin, filling each cup halfway.
  • Bake for 15-18 minutes or until the edges set.
  • Use a spoon to press a well into each brownie while warm.
  • Let the brownie cups cool completely before filling.

Prepare the Coffee Mousse

  • Whip heavy cream, powdered sugar, and espresso powder to soft peaks.
  • Stir in vanilla extract and chill for 15 minutes.

Assemble the Brownie Cups

  • Pipe the mousse into the cooled brownie cups.
  • Drizzle melted chocolate over the top.
  • Let set for 10 minutes before serving.
