These Coffee Pecan Energy Bars are a tasty, no-bake snack that combines rich coffee flavor, crunchy pecans, and wholesome ingredients to fuel your day.

- 1 cup rolled oats
- ½ cup pecans chopped
- 2 tbsp ground espresso
- 2 tbsp maple syrup
- ¼ cup almond butter
- 1 tsp vanilla extract
- Pinch of salt
- ¼ cup water optional, for consistency
In a food processor, pulse oats and pecans until coarsely chopped.
Add espresso, maple syrup, almond butter, and vanilla. Process until mixed well.
If mixture is too dry, add water little by little.
Press mixture into an 8x8 pan lined with parchment paper.
Refrigerate for 30 minutes until firm.
Cut into 12 bars and enjoy.
