Crockpot Beef Brisket with Coffee Panna Cotta

A slow-cooked, vegan “beef” brisket that falls apart beautifully, paired with a smooth coffee panna cotta for that rich, creamy dessert finale.

Ingredients
  

Vegan Brisket:

  • 1 tbsp olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 package seitan 16 oz, sliced thick
  • 1/4 cup soy sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp liquid smoke
  • 1 tbsp maple syrup
  • 1 cup vegetable broth
  • Salt and pepper to taste

Coffee Panna Cotta:

  • 1 1/2 cups coconut milk
  • 1/2 cup brewed strong coffee
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp agar-agar powder
  • Optional: vegan chocolate shavings or cocoa dust

Instructions
 

For the Brisket:

  • Heat olive oil in skillet. Sauté onion and garlic until golden and smelling fabulous.
  • Add seitan and lightly brown on each side.
  • Mix soy sauce, broth, tomato paste, spices, liquid smoke, and maple syrup in a bowl.
  • Place seitan and onion mixture into the crockpot.
  • Pour sauce mixture over everything.
  • Cook on low for 7 hours until seitan is tender and flavorful.
  • Serve hot with roasted veggies, mashed potatoes, or sass.

For the Coffee Panna Cotta:

  • In saucepan, mix coconut milk, coffee, maple syrup, and vanilla.
  • Stir in agar-agar and bring to boil. Simmer 2 minutes.
  • Pour into molds and refrigerate at least 2 hours.
  • Garnish with chocolate or cocoa before serving. Strike a pose.
