These espresso cinnamon energy bars blend bold espresso with the warmth of cinnamon. They're a delicious, no-bake, nutrient-packed snack.

Ingredients
  

  • 1 cup dates pitted
  • ½ cup rolled oats
  • 2 tbsp ground espresso
  • 1 tsp ground cinnamon
  • 2 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp water if needed

Instructions
 

  • Process dates in a food processor until finely chopped.
  • Add oats, espresso, cinnamon, almond butter, maple syrup, vanilla, and salt. Process until smooth.
  • If the mixture feels too dry, add water slowly until it binds.
  • Press the mixture into a parchment-lined 8x8 pan.
  • Refrigerate for 20-30 minutes, then cut into bars.
  • Enjoy your caffeinated snack!
