- 1 cup dates pitted
- ½ cup rolled oats
- 2 tbsp ground espresso
- 1 tsp ground cinnamon
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp water if needed
Process dates in a food processor until finely chopped.
Add oats, espresso, cinnamon, almond butter, maple syrup, vanilla, and salt. Process until smooth.
If the mixture feels too dry, add water slowly until it binds.
Press the mixture into a parchment-lined 8x8 pan.
Refrigerate for 20-30 minutes, then cut into bars.
