Ingredients
  

  • 1 cup oats
  • 1/2 cup dates pitted
  • 2 tbsp espresso powder
  • 1/2 cup shredded coconut
  • 2 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 2 tbsp coconut oil
  • 1-2 tbsp water if needed

Instructions
 

  • Combine oats, dates, espresso powder, coconut, maple syrup, vanilla, and salt in a food processor.
  • Add almond butter and coconut oil; blend until smooth.
  • Add water a little at a time if the mixture is too dry.
  • Press the mixture into a parchment-lined 8x8 pan.
  • Refrigerate for 20-30 minutes.
  • Cut into bars and enjoy!
