- 1 cup oats
- 1/2 cup dates pitted
- 2 tbsp espresso powder
- 1/2 cup shredded coconut
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp coconut oil
- 1-2 tbsp water if needed
Combine oats, dates, espresso powder, coconut, maple syrup, vanilla, and salt in a food processor.
Add almond butter and coconut oil; blend until smooth.
Add water a little at a time if the mixture is too dry.
Press the mixture into a parchment-lined 8x8 pan.
Refrigerate for 20-30 minutes.
Cut into bars and enjoy!
